Bikini

Makes enough for 10 people

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Citrus Syrup: Place all the items inside a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. After that, turn off the burner and leave to cool down completely. Transfer into a sterilised bottle, cap it and store chilled, where it will keep for up to a month.

To make Cocktail Base: Combine the specified spirits and syrup into one big jug, allow it to infuse for one hour, then filter it best through cheesecloth, to ensure it's fully clarified.

When ready to serve: Add 85ml of your cocktail base into a stirring glass filled with ice, gently stirring carefully for one minute to cool it down. Pour into a cold coupe glass or similar, decorate with the cranberries and complete it using a brief mist of mandarin oil over the drink.
